almost paleo stuffed bell peppers

 

My Stuffed Peppers are filled with LEAN grass-fed and seasoned ground sirloin, then baked to perfection.

 

I found several recipes online for healthy stuffed bell peppers, but ultimately, this is my recipe. I love finding recipes all over, combining them and then modifying them to make them healthy and custom to my dietary preferences.

Preheat your oven to 350°F.

What’s will I need?

 

  • 6 large peppers
  • 2⅓ pounds grass-fed and organic ground sirloin
  • 1 teaspoon garlic salt
  • 1 teaspoon Italian seasoning
  • 1 teaspoon basil
  • ¼ teaspoon pepper
  • 3 teaspoons fresh & organic marinara sauce
  • 1 organic cage-free egg
  • ¼ cup coconut flour

 

What do I do?

 

  1. Cut the tops off of the peppers and clean out the seeds. Set aside.
  2. In a large bowl, mix together the ground sirloin, garlic salt, egg, coconut flour, Italian seasoning, basil, pepper and 3 teaspoons of spaghetti sauce.
  3. Stuff the ground sirloin mixture into the cleaned green peppers.
  4. Place the stuffed peppers in a baking dish and top each pepper with ¼ cup additional marinara sauce, bake 90 minutes.
  5. After 90 minutes, check to see how far along the peppers are cooked; if they are nearly done uncover and baste with some of the spaghetti sauce from the baking dish (as mentioned above, if baking many peppers all at one time there is the possibility that they will not be as far along at this point – please continue to bake covered an additional 30 to 45 minutes and then proceed with the following instructions.).
  6. Bake an additional 20 minutes then top each pepper with parmesan cheese (not paleo) and continue baking another 10 to 15 minutes.

I am in a really beachy mood! Not just any beach, Laguna beach!

I LOVE Southern California. Mostly because I can dress all summer-like and still wear my leather jacket.

There’s nothing better than lounging around in comfy clothes, listening to the waves crash in.

You can find the above comfy one-piece at Barney’s. It’s a staple in my suitcase to the beach! I also wear these Loeffler Randall fringey’s like everyday!

 



I’ve had this bag for a couple of years now but it’s still in good shape. I take it to the pool and to the beach, stuff a million electronics in it (and sometimes shoes when my suitcase won’t zip) and it’s still going strong. Thank you Salvatore Ferragamo for this baby! Unfortunately, I don’t think they make it anymore. But I’ve got my eyes on this one.

Out on the town in Laguna?.. keep it casual! This is definitely a year of all white everything over here. There is something about sunshine and white together.

This top is Asos brand from asos.com — the neckline dresses things up a bit. My favorite leather jacket is a steal from Barney’s paired with a pair of JBrand jeans a LF’s. Nothing fancy, just simple and chic.

My personal style is FAR from cutesy – and most floral pieces make me cringe! After my first visit to Maui last year, something changed in me. I had a newfound love for floral. Don’t get me wrong, floral can be…wrong (oh my, on so many levels). But, when done right it can cheer up any day!

 

 

This is one of my favorite pieces that I own. The skirt, that is! It’s from last years Show Me Your MuMu collection and I can’t seem to find it for you guys. The good news is that they have SO MANY floral pieces to get excited over this year.

Try pairing the floral piece with minimal accessories and keep the top simple!

 


I have another Maui trip around the corner and I can’t wait to get crazy in the floral. Don’t forget to add some life to your wardrobe this year whether you’re on the beaches of Maui or by the pool in Arkansas.

I love Hawaii! There’s something about the sun, the warm(ish) salty water, and relaxation floating in the air. It brings me back down to earth. Literally squeezing sand between my toes without a worry in the world. My skin breathes and I eat healthier (however, the cocktails flow freely). It’s a carefree place and my gypsy soul loves everything about it. 

 

 

The cutest little clothing store “Mahina” has everything you need to get your “chill girl” vibe goin’ . . . and it’s so affordable (so pack lightly and stock up while you’re in the area). That’s me pictured above in a Mahina cover-up (it was my outfit the night before). The beach hat is ASOS brand. I love buying beachy hats for cheap because by the end of the trip I stuff them in the bag and hope they get their structure back by the next trip.

Oh . . .Hawaii, what is it about you. . .

I don’t feel the need to dress up, I wear my suntan proudly! The only times I’ve ever had the pleasure of visiting Maui were for weddings. So you have to at least brush your hair for those things. But, that’s about as far as I get!

 

 

I don’t think it’s a secret that I love my designers! But, I have to say, I’ve found some cutesy swim suits on AdoreMe lately. They’re trendy and affordable (never pay a lot of money for something on trend…word for the wise). If I plan on swimming in the ocean and playing in the sand, I don’t want to worry about my $200+ swim suit ruining.

Spinach is a winter superfood because of its phytonutrients.  Fresh 100 g of spinach contains about 25% of daily intake of iron! (what they said ).

I often find it difficult to enjoy a salad on a crisp winter day. But, I realized that if I’m drinking something warm, I actually enjoy the salad!

This salad recipe is not only easy, but it’s satisfying! I think i’ll make this as a side dish on Christmas day.
