There is really nothing more satisfying to me that homemade junk food. I grew up in the south and am the literal queen of turning childhood favorites into healthier dishes, I can’t help it. When I started my blog back in 2013, I was already creating these types of recipes for a year on my Instagram channel. I missed southern food but was also in just a healthier place in my life. I remember making one of the first ever cauliflower crust pizzas. It took forever and there was so much trial and error! I don’t have the time I had back then, so I stick pretty closely to convenience these days. But I highly recommend taking a Saturday to make this for your family. I swear its a crowd-pleaser.

My dad always made amazing pork tenderloin so I’ve been attempting a little of what I picked up from him throughout the years. This recipe is sort of like his, but using the sous vide, of course. You can always roast your pork tenderloin if you don’t have a sous vide. But I’ve been experimenting on bigger meals lately so that one day in the future, when we can have parties again, I can host family and friends!

Aren't these salad skewers so cute? They are pretty healthy too! They are also the EASIEST thing to make. All it takes is grilling some chicken and then throwing the skewers together with the other totally easy ingredients. I pretty much threw this recipe together in about 30 minutes (including grilling time!) and I was so happy with the result!
