This salad is SO delicious. It feels SO BAD. But you don't have to feel guilty, it's not!!
Use your judgment on amounts. I usually do one veggie per person, 8 small pepperoni's for one person, 4 pepperoncini's per person and 1 small can of black olives per person.
baby spinach
roma tomato
black olives
pepperocinis
feta crumbles
oregano
english cucumber
uncured pepperoni
Chop each little veggie to perfection and combine. Add chopped pepperonis and feta.
Dress with olive oil, balsamic vinegar, pinch of salt, a lot of peppercorn, and oregano.
So easy!! So delicious and a wonderful way to get in a ton of veggies!
Its also the perfect salad to make ahead of time because it can be stored for almost a week!
