secret ingredient for a perfect kale salad

Anyone who knows me knows I LOVE kale salad. Well, they know I love kale salad and that I HATE BABY kale. We're not here to discuss that but I wanted you to know. 

So anyway, I make a ton of kale salads. I'm kind of obsessed and I admit it openly. Yes, I know what you're thinking. . . "Candice, you love all nutritious foods", and, maybe that's true. BUT, my husband on the other hand. . . not so much. So the true test always lies with him. Will my readers like this meal? TEST ON KEVIN. So, that's what I do. I test my meals on him. 

HE LOVES THIS KALE SALAD. I never thought I would be able to say that truthfully. But he does. I even got him to eat it as a side to his grilled hot dogs last night. Amazing. 

So I wanted to share this recipe with you because, well, there are a lot of really disgusting kale salads out there and regular people like you and Kevin (haha) need delicious food in your lives. 


You will need. . .

5-6 Stems of Tuscan Kale

1 tspn Red Pepper Flakes (less if you're sensitive to spice)

1/2 tspn  Chili Powder (optional)

Himalayan Sea Salt to taste

1 tspn EVOO

1 tspn Balsamic Vinegar

1 tspn Turmeric 

1 tspn Ground Ginger

1 tspn SECRET INGREDIENT

1/2 Small Cucumber, cut into small fine pieces

1/2 Green Bell Pepper, cut into small fine pieces

1-2 Whole Avocados, chopped

Handful of Slivered Almonds

1/2 cup of Parmesan Cheese

First, let's start with the basics. Kale is tough. It takes a bit of your time and sadly, it cannot be prepared too far in advance, or else it takes on a beef-jerky-like-texture. It's full of nutrients and we have to treat it with care. So lay down little kale, it's time for your olive oil massage. 

Pull the kale from the stems and chop (I like to chop mine almost in shreds, makes it easier to eat), throw in a bowl, add the olive oil and massage for one minute. Add in all ingredients EXCEPT avocado, toss well. Top with avocado and a little more Parmesan. Refrigerate for 10 minutes (at least) before serving or place in freezer for a couple of minutes.
