You guys! I woke up one morning craving waffles because I had a dream I was eating waffles the night before. I recently just bought this cute little mini waffle maker too so I was SO excited to get in the kitchen and get these babies going. And then, whomp whomp.... I realized I had NOTHING to make a traditional waffle. So I had to get extremely crafty.
Side note: these can easily be made Vegan by using coconut oil in place of Ghee. You can also sub out honey for date sugar.
So, I basically had nothing -- I pulled out my little packets of oatmeal and a few things from the fridge like coconut oil, maple syrup, and fresh Summer peaches.
And guess what, as nutritious as these were, they were the best waffles I've ever had. I actually made enough for me and Kevin to share, but I ended up eating all of them because he slept in. I battled with "do I tell him / do I never tell him" for a while and then I thought, you know what.... the world has to have this recipe. So, I took one for the team and told him tonight.
Yields about 6-8 mini waffles using the waffle maker I linked above**
you will need
1 pack of Better Oats
1 teaspoon of coconut oil
1 tablespoon of ghee
1 teaspoon of honey
1/2 teaspoon of bee pollen (optional)
1/2 cup almond or coconut milk
1 fresh peach, skinned and chopped
1 scoop collagen protein (optional)
what to do
Blend all ingredients together in a Vitamix (leaving out 1/2 teaspoon of ghee to put on waffles after cooking finishes, and 1/2 teaspoon of coconut oil to use in peaches) until fully mixed. Heat waffle maker and spray irons with coconut oil. When ready, pour a thin layer of mix into waffle maker and cook to your desired time.
In a pan, caramelize chopped fresh peaches in maple syrup and coconut oil.
Remove waffles carefully and top with peaches! Voila!
