After my juice cleanse last week I was craving something hearty but I didn't want to sabotage all my hard work with a sodium-filled dish out. I had some visitors and was inspired by a friend who mentioned her meal prep. I knew exactly what I wanted at that point and put this dish together and ate it for three days.
Yields 3-4 Servings
you will need
1 lb ground turkey
1 cup bean sprouts
1/2 cup chives or chopped green onions
3 tablespoons dried ginger
fresh garlic (up to you, I put A TON because I was fighting a cold)
2 cups chopped broccoli or broccolini
1 cup diced celery
Coconut Teriyaki Sauce to taste
Spray coconut oil

Cook each ingredient separately in wok adding garlic and coconut oil -- and remove each before done. Stir-fry together for a few minutes until completely mixed. Stirring in Coconut Teriyaki sauce at the end. Top with more ginger and chives for garnish.
