Swimsuit Approved Summer Spaghetti

 
 

I'll say it. I'm obsessed with spaghetti. I love it so much so that I have to get creative with my recipes. This one is beach approved and extremely easy (like all of my recipes). So have your pasta and your nice waistline too!

 
 

Feeds 4-5 people

You will need: 

1 1/2 pounds ground chicken breast

1 teaspoon sweet paprika

salt & pepper

1/2 teaspoon dried sage

1/2 teaspoon dried thyme

1/4 teaspoon cayenne

1/4 teaspoon ground peppercorn

olive oil

24 oz jar of marinara

1 large spaghetti squash or 4 spiraled zucchinis

1 garlic clove minced

1 teaspoon garlic powder 

1 teaspoon onion powder

1 bell pepper, chopped

6 crimini mushrooms, sliced

shaved parmesan

 
 

Combine sage, thyme, paprika, salt, pepper cayenne, garlic powder, and onion powder in a bowl and then add chicken. Mix well until chicken is completely covered in seasonings. 

 
 

Cook spaghetti squash or sauté zucchini spirals -- zucchini will release water so make sure to drain. 

 
 

In separate pans heat olive oil an garlic, and cook chicken, bell peppers and mushrooms until almost done. Add all together and sauté for about one minute making sure chicken is cooked thoroughly. Add marinara and bring to a boil, turn temperature down and simmer for five minutes.

Place pasta in your dish and cover with your delicious chicken meat sauce. Top with Parmesan and serve with a nice sauvignon blanc.
