Grilled Chicken Caprese Salad Skewers | 4th of July
Hey guys!! Aren't these salad skewers so cute? They are pretty healthy too! They are also the EASIEST thing to make. All it takes is grilling some chicken and then throwing the skewers together with the other totally easy ingredients. I pretty much threw this recipe together in about 30 minutes (including grilling time!) and I was so happy with the result! The mozzarella pearls are pretty indulgent but everything else about these skewers are so healthy and perfect for summer. Here's the recipe! (this recipe makes about 8 skewers, so adjust as necessary).
you will need
Olive Oil
Salt & Pepper
6 Chicken Breast tenders
Cherry Tomatoes
Mozzarella Pearls
Basil Leaves
Spinach
Wooden Skewers
Step 1: Coat the raw chicken breast tenders with olive oil, salt, and pepper.
Step 2: Cut the tenders into bite sized pieces
Step 3: Slide all of the pieces of chicken onto the skewers
Step 4: Grill the chicken skewers over medium heat for 20 minutes, rotating the skewers every 5 minutes.
Step 5: Slide the chicken off of the skewers and let them cool down a little at room temperature for about 5-10 minutes.
Step 6: While the chicken is cooling, you will want to prep your other ingredients: Wash the cherry tomatoes, spinach and basil leaves. You can also coat your mozzarella pearls in olive oil and whatever seasonings you like or you can leave them plain!
Step 7: Assemble the skewers! You can go with a pattern or you can stick the ingredients on however you want and then they are ready to be served. Enjoy!! They are going to make your 4th of July gathering so cute! Pro tip: These go great with pesto on the side!
