Carne Asada Street Tacos + Elote | Casual Recipe

carne asada sous vide street style tacos
1.5 lb flank steak
1 bunch cilantro, chopped
corn tortillas
cooking oil
2 - 3 limes, quartered
1 tablespoon ground cumin
1 teaspoon chili powder
1/2 teaspoon pepper
1/4 teaspoon kosher salt
garlic powder
one jalapeno (remove seeds and cut in half)
This recipe is for a sous vide, but flank steak can be cooked to perfection on top of the stove, in the oven, or on the grill, too!
Add flank to a bag and season with salt, pepper, chili powder, cilantro, garlic powder, halved jalapeno and oil. Add to preheated sous vide water bath at 135f and cook for 2 hours. Remove. Pat-dry, chop into bits, and re-season. Heat cast iron skillet until cooking oil is bubbling and add bits of carne asada in to brown on each side.
Warm corn tortillas, add carne asada & cilantro, squeeze with lime and serve immediately.
Wine Pairing serve with Domaine Bousquet Premium Malbec 2019 from Uco Valley, Mendoza, Argentina
Oven Roasted Elote
corn on the cob
fresh cilantro
cooking oil
cotija
lime juice
chili powder, cayenne pepper, salt and pepper (can also use elote seasoning from Trader Joes)
Queso fresco
Preheat oven to 425 f and roast corn naked with a few drizzles of oil. Turn after 15 minutes and let roast another 15. Add queso fresco, lime juice, chopped cilantro to a bowl and stir. Add to corn before serving. Dress with cotija. Serve immediately.
